Udon noodles stir-fried with vegetables in sweet and sour sauce

Ingredient

  • 450gr udon noodles
  • 400gr mixed vegetables of your choice (cauliflower, mushrooms, carrots, etc.)
  • 1 piece of tofu
  • 1 large purple onion
  • 3 cloves of garlic
  • ½ tablespoon grated ginger
  • 2-3 green onion branches
  • 1 tablespoon oil

Sauce part

  • 3 tablespoons of soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon chili sauce
  • 1 tablespoon vegetarian oyster sauce
  • 1 tablespoon rice vinegar

Making

  • Cut the beans into thin slices and fry them crispy (can be marinated with sauce)
  • Cut vegetables into bite-sized pieces, mince garlic, green onions and purple onions
  • Prepare the sauce by mixing the ingredients until smooth
  • Heat oil in a pan, add shallots, garlic and ginger and sauté for about a minute
  • Add the vegetables and stir-fry for a few minutes, then add the sauce and stir-fry for another minute
  • Boil the noodles, drain them, then add them to the pan and mix well until the sauce is absorbed
  • Serve on a plate, decorated with green onions and tofuq
